Zucchini Bread

Zucchini Bread

3 eggs

1 Cup olive oil (or 1/2 c coconut oil & 1/2 c olive oil)

1 cup erythritol

1/2 cup raw honey

1 tsp. salt

1/2 tsp vanilla

1 tsp. xanthan gum

1 1/2 tsp. baking soda

1/2 tsp. baking powder

1 Tbsp. cinnamon

1 tsp. nutmeg

1/2 tsp. cloves

Beat with mixer

1 cup tapioca flour

2 cups sorghum flour

1/2 cup coconut flour

1/2 cup almond flour

Beat with mixer

stir inĀ 2 cups fresh grated zucchini

grease bundt pan with coconut oil and use oat flour over the oil.

bake at 350, 40-45 minutes (toothpick test works)

Glaze with coconut oil/raw honey mixture ( about 1/2 cup of each)
